Day 353: Baked Feta Pasta

This is a super simple pasta recipe that you really can't mess up. Plus, most of the time used is for the feta and tomatoes baking!

You can use whatever pasta is your favorite. I used penne, but I also love rigatoni. Whole wheat pasta also will work just fine!

If you don't have feta as a block, I've found that crumbled feta is also a good alternative. I definitely recommend getting a block of feta though.

You can even add extra veggies to this pasta. Broccoli, mushrooms, and spinach are all delicious add-ins!

Make sure to top your baked feta pasta with fresh basil leaves and a sprinkling of grated parmesan!

RECIPE:


INGREDIENTS:

  • 8 ounces pasta, cooked and drained

  • 1 pound cherry tomatoes

  • 1 block feta cheese

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 cup basil leaves

  • 1 clove garlic, minced

  • 1/2 cup olive oil

STEPS:

  1. Preheat your oven to 400 degrees F, and add the cherry tomatoes into a casserole pan. Place a block of feta cheese in the middle and sprinkle the salt and pepper all around the pan. Drizzle the olive oil on top of the tomatoes and feta. Bake for 25 minutes.

  2. Add the basil and minced garlic and pasta to the casserole pan. Mix to combine and serve.
