Day 339: Beet Tortellini

I just released a new poll on my home page. I'm asking what's your favorite dessert and then I'll bake the winner! Make sure to vote now because the poll will end on March 1st.

This tortellini is PERFECT for Valentine's Day! It's easy to make, with a bright pop of that vibrant pink.

If you have your own favorite filling, you can add it to the tortellini. In this recipe, I used a classic cheese filling.

To fold the tortellini, I've included a video from my classic tortellini (without beets) recipe. It uses the same filling, and you can learn how to fold the tortellini.

This is a great way to celebrate Valentine's day tomorrow. You'll love the taste of this easy and homemade pasta. Serve with any sauce you like!

RECIPE:


INGREDIENTS:

  • 2 cups all-purpose flour

  • 3 eggs

  • 1/4 cup pureed beets, unroasted with the skins off

  • 1/4 cup ricotta

  • 2 tablespoons parmesan

STEPS:

  1. Knead flour, eggs, and beets together. Let it sit for 30 minutes. Mix the ricotta and parmesan together in a large bowl.

  2. Roll into a large rectangle (thin enough to see through) and cut out circles with a cookie cutter.

  3. Take one circle and run your fingers along the edges of the circle with a wet finger. Add 1/2 a teaspoon of your filling and fold over, making a half-moon. Take the two ends together, and pinch. Repeat for all circles.

  4. Boil some salted water, and add your tortellini. Cook for 5-10 minutes, and serve.
