One more day until "Day 100", and I'm so excited!!! It's almost been 100 days of baking/cooking straight! For the 99 day, here is blueberry pancakes! They are so yummy and easy to make!
The blueberries help give a burst of sweetness to these pancakes!
You can also put strawberries or other fresh fruit - raspberries?
Make sure you cook this on your lowest heat. It will matter!!!
These are amazing fluffy blueberry pancakes, that nobody can resist!

RECIPE:
INGREDIENTS:
2 cups all-purpose flour
2 1/2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 cups buttermilk
2 eggs
3 tablespoons unsalted butter, melted
1/2 cup blueberries, rinsed
Oil, to grease the pan
maple syrup, to serve
STEPS:
In a large bowl whisk together, flour, sugar, salt, baking powder, and baking soda. In another small bowl mix the buttermilk, eggs, and butter. Pour the wet into the dry, the batter might have some lumps.
Heat your griddle with oil and using 1/3 cup, pour the batter onto the pan. Working quickly mix sprinkle some blueberries on top, about a tablespoon. For each side cook the pancake for 1-2 minutes on low heat.
