Day 302: Breakfast Cookies

Have you ever wanted a cookie for breakfast? I would. Today I'm making that dream possible, introducing my healthy breakfast cookies!

The only ingredients you need are:

  1. Rolled Oats

  2. Peanut Butter

  3. Apple Butter (bananas work as well)

  4. Honey

  5. Mix-ins of choice

If you don't have apple butter you can use bananas. Even applesauce works! For my add-ins, I love to use strawberries, blueberries, and pistachios. Berries work best.

Other options include dried cranberries, raisins, cashews, almonds, and chocolate chips. Anything you have on hand! This is a great customizable recipe!

You can even make these cookies for snacks. They are quick to make, and a great way to eat your breakfast!

RECIPE:

INGREDIENTS:

  • 2 cups rolled oats

  • 1/4 cup peanut butter

  • 1/2 cup apple butter, or 1/2 cup mashed bananas

  • 3/4 cup honey

  • 1/2 cup mix-ins of choice

STEPS:

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. With an electric mixer beat all the ingredients (except the mix-ins) for 2 minutes. Fold in your mix-ins and with an ice cream scoop, drop the cookie dough onto the prepared parchment paper. Flatten into a disk and bake for 30 minutes.
