Week 4: Brigadeiro Cake

It’s safe to say that this brigadeiro cake is absolutely decadent. The cake is a delicioius sweet treat that is based off brigadeiros, a traditional Brazalian dessert.

It contains two layers of chocolate cake sandwiched between a creamy chocolate filling. And let’s not forget the bridgaderio frosting topped with actual bridgaderios.

While the cake is a labor of love, it is worth the wait. It is impossible to resist another slice!

This brigadeiro cake is a showstopper that will stun your guests at any party you bring it to.

 

RECIPE:


INGREDIENTS:

Cake:

  • 1 cup all-purpose flour

  • 1/2 cup chocolate chips

  • 3/4 cup granulated sugar

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 eggs

  • 1/4 cup vegetable oil

  • 1/4 cup butter, melted

  • 1/2 cup yogurt

Filling:

  • 2 tablespoons butter

  • 1 can condensed milk

  • 1 cup semi-sweet chocolate chips

  • 1/4 cup heavy whipping cream

Frosting:

  • 2 tablespoons butter

  • 1 1/2 cans condensed milk

  • 1 1/2 cups semi-sweet chocolate chips

  • Chocolate sprinkles

STEPS

  1. Preheat the oven to 350 degrees F and line two 6-inch cake pans with parchment paper.

  2. In a large bowl, mix all your cake ingredients together. Divide evenly amongst your two prepared cake pans and cake for 35 minutes. Once finished, set the cakes aside to cool to room temperature.

  3. While your cakes are cooling make the filling. In a pot over low heat, stir the butter, condensed milk, and chocolate chips until the mixture is thick. This should take about seven to ten minutes. Add in the heavy cream and let the filling cool to room temperature.

  4. Now, make the frosting. Cook the butter, condensed milk, and chocolate chips in another pot over low heat. Wait until the frosting thickens and set aside to cool. You will not be adding heavy cream to this mixture.

  5. Finally, assemble your cake. Spread your filling onto the cake base and top with another cake layer. Frost your cake with the homemade frosting. Roll balls out of leftover frosting and cover them with chocolate sprinkles.
