I first had burrata on toast in New York, and I absolutely feel in love with it!

I have been dreaming about it since the summer, and decided to recreate it for this week.

It is the most refreshing toast you can have, and will make you want summer to last forever.

For those who don’t know, burrata is essentially mozzarella cheese with cream inside, and it pairs perfectly with the marinated tomatoes in the recipe below.
RECIPE:
INGREDIENTS:
2 cups cherry tomatoes, cut in half
1 clove garlic, grated
1/4 cup olive oil
1 tablespoon balsamic vinegar
1/4 cup chopped basil
1 teaspoon honey
Salt and pepper, to taste
1-2 pieces of burrata
Bread/crackers
STEPS:
In a large bowl, mix the tomatoes, garlic, olive oil, balsamic vinegar, basil, honey, and salt/pepper. Let it marinate for 25 minutes.
Break the burrata open when ready to serve and smear it over some grilled bread or crackers. Top with the tomato mixture.
