Hello everyone! I'm super excited to share with you this amazing chocolate strawberry cake, but first I have some news!

Nevertheless, back to the cake! This cake is made with a chocolate cake base, that is moist and amazingly rich. It's topped with a strawberry frosting (more on that in a bit) and some chocolate strawberries. Chocolate and strawberries blend so well together, and the buttercream is so light and fluffy that it complements the rich chocolate cake. It's truly spectacular.
The chocolate covered strawberries are optional, but a great touch of flavor. You can make this cake in 2, 8" pans, or 3, 6" pans.
The strawberry frosting is a normal buttercream with freeze dried strawberries. Freeze dried strawberries aren't my favorite thing. I don't like that the strawberries are way more sour, but in this buttercream, it's essential. For starters, you can't use pureed strawberries, because well, your buttercream will just become liquid. Freeze dried strawberries add:
Color
Taste
No liquid
This makes it perfect for the buttercream. The second thing I want to talk about will be the chocolate strawberries. You can microwave the chocolate chips, but it just doesn't give you the right texture, or shine. When you cook them over the stove with a bit of water, it will give you a "mirror glaze" and it's perfect to be dipped by the strawberries.
The chocolate covered strawberries are optional so I'm going to give you the recipe here:
1/2 cup chocolate chips
1/4 cup water
STEPS:
Over medium heat stir chocolate chips and water until it's shiny and the consistency of heavy whipping cream.

INGREDIENTS:
1 cup freeze dried strawberries
1 cup butter
4 cups powdered sugar
1/2 cup heavy whipping cream
Strawberries and chocolate chips for garnish
STEPS:
In an electric mixer, beat together butter, powdered sugar, and freeze dried strawberries. Add in heavy whipping cream and add a few spoonfuls into a piping bag.
With your first layer smother on the frosting. Keep layering with frosting until finished. Frost the sides and pipe on the front of your cakes. Line fresh strawberries along the sides of your cake. Add chocolate chips, and chocolate covered strawberries.
