Day 241: Chocolate Strawberry Rice Krispy Treats

These are a no-fuss recipe for Rice Krispy treats. There are no marshmallows and sweetened by maple syrup and dark chocolate.

I know it's fall and I'm using strawberry, a summer fruit, but I love how these turned out! The Rice Krispies stayed crispy and the chocolate and strawberry were able to shine out through the dish!

Though these don't have the same texture of the classic marshmallow Rice Krispy treats, they are definitely a healthy alternative to the sugary marshmallows!

These are perfect for a quick snack and tasty as well. For the strawberries I used freeze-dried. If you were to use fresh strawberries, they might make your Rice Krispies to soggy, and it won't taste good.

I love the addition of the bright strawberries paired with the dark chocolate. It reminds me of chocolate-covered strawberries!

RECIPE:


INGREDIENTS:

  • 1/3 cup butter (almond butter will work as well!)

  • 1/3 cup maple syrup

  • 4 cups Rice Krispy cereal

  • 1/2 cup unsweetened chocolate chips

  • 3/4 cup freeze-dried strawberries

STEPS:

  1. Melt your butter and maple syrup over medium heat. The mixture will bubble up a bit, but that's okay. Cook for 2-3 minutes, stirring so the butter doesn't burn.

  2. Add your Rice Krispy treats to the pot and take off the heat. Stir and pour onto your prepared pan.

  3. Melt your chocolate in 30-second intervals, stirring each time. This may take up to 4 minutes until fully melted. Layer on top of your Rice Krispies and sprinkle your freeze-dried strawberries. Freeze for at least 1 hour (but preferably 2 hours) and cut into squares.
