It's apple season, yay! Thank you to the dear subscriber who recommended me to make an apple cake! Here you go!

I love this cinnamon apple cake because it's not layered with tons of frosting. Instead it's a single layered cake that's meant to be served with ice cream. It's a dense, yet moist, with a cinnamon sugar mixture on top.

It's made with fresh cut apples, and is perfect for summer!

Cinnamon ice cream, is a must! But vanilla will also work. To balance out all that delicious, rich, apple cake, you need something light and cold.

When you cut your apples, consider the size you cut them:
Thin slices - will give you juicy bites of apples, but are not too big and overwhelming.
Shredded - You won't be able to taste any of the apples texture, but it will add to the sweetness.

RECIPE:
INGREDIENTS:
Apple Cake:
1/2 cup brown sugar
1 teaspoon baking soda
2 1/2 cups whole wheat flour
1 egg
1 cup buttermilk
1/3 cup of vegetable oil
2 1/2 cups apples, cut thinly or shredded
Cinnamon Sugar Mixture:
1/2 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon butter, melted
Vanilla or cinnamon ice cream, optional
STEPS:
Mix all ingredients together adding the apples last. Pour into a greased 9" circle pan. Preheat oven 325 degrees F.
In a small bowl mix sugar, cinnamon, and butter. spread over you cake and bake for 45 minutes.
Top with vanilla or cinnamon ice cream.
