This biscotti is a one-bowl cookie recipe, with no butter or oil! It's flavored with orange and cranberry but feel free to mix and match flavors as you wish.
With the holidays coming right up around the corner, I thought orange and cranberry are just perfect for the season.
Not to mention today is National Cookie Day. With this in mind, I decided to make my favorite cookie, biscotti!
Dried fruit is really nice in biscotti, if you use fresh fruit it can make your biscotti soggy, and no one likes that! The dough may be slightly sticky. Just flour up your hands and it will be okay. Also, the dough might be a bit crumbly at first, just stir in the egg really well with a spoon, spatula, or whisk, and add your orange juice.

RECIPE: INGREDIENTS:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1 egg
1/3 cup orange juice
2 tablespoons orange zest
1/4 cup dried and chopped cranberries
STEPS:
Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. In a bowl, whisk your flour, sugar, and baking powder together. Stir in the egg, orange juice, orange zest, and cranberries. Knead and form a ball.
Take your biscotti dough and form it into a 12-inch by 4-inch rectangle. Bake for 30 minutes.
Cool for five minutes and cut 1-inch wide pieces out of your biscotti block. Lay the slices on the parchment paper and bake for another 20-30 minutes. You can tell that your biscotti is done when the middle is crunchy.
