S'more cookies are just like plain chocolate chip cookies but filled with a gooey marshmallow center and some graham crackers.
The marshmallow is what really makes this dish special. Especially when it comes straight from the oven. It's hot and sticky, plus it looks very appealing.
The graham crackers also add a nice touch. The cookies are soft, so the cracker adds a great crunch.
The hard part about these cookies is the assembly bit. You're going to want to take your cookie scoop and scoop the dough out of the bowl. Make a hole using your fingers, in the center, and plop half of a marshmallow. Release and roll into a ball make sure that you get 1/2" of marshmallow peeking out.

RECIPE:
INGREDIENTS:
1 cup unsalted butter
1/2 cup granulated sugar
1 cup light brown sugar
2 large eggs room temperature
3 cups all-purpose flour
1 teaspoon baking soda
2 cups chocolate chips
4 sheets graham crackers, cut into small pieces
Around 13 marshmallows, cut in half
STEPS:
With an electric mixer cream butter, granulated sugar, and brown sugar. Add the eggs one at a time. Add the flour, baking soda, chocolate chips, and graham crackers.
With a trigger-release ice cream scoop, scoop out some cookie dough. Make a hole with your fingers and add half a marshmallow inside. Roll into a ball and leave 1/2" of marshmallow peeking outside. Repeat until you don't have any more dough left. Place them all on a baking sheet, each 1-2 inches apart. They will spread.
Bake for 12-15 minutes, and serve hot.
