For this recipe, I didn't have tomato sauce at hand, so I made some spinach puree and white sauce and it tasted awesome.
Boil the lasagna over medium-high for about 15 minutes. Drain and save for later.
Cook butter and flour together, and pour in milk. Stir until thickened.
The Spinach puree is super easy, just stir everything on a pan for 5 minutes and then puree it in a blender!
RECIPE:
INGREDIENTS: 1/2 box of lasagna
Spinach Puree:
1/2 onion
1 carrot
1/4 cup spinach
1 zucchini
White Sauce:
1 tablespoon butter
1/2 cup flour
1 cup milk
1/2 teaspoon salt
Cheese:
1/4 cup parmesan
14 oz ricotta
STEPS: Cook pasta according to the box's instructions.
For the spinach puree, cook all ingredients together for 5 minutes, then puree and set aside. To make the white sauce, add butter and flour together for 3 minutes. Then stir in salt and milk until thick and creamy.
Preheat oven 350 degrees.
Oil a pan and add a tablespoon of puree and spread over pan. Layer lasagna, spinach puree and white sauce in any order. Cover 2 times in aluminium foil and bake for 25 minutes.
