Because it's Easter today, I thought I should make these Easter cookies. They actually turned out really good. Another option you have is to cut out bunnies instead, which would be so cute!
You might be wondering what the weird brown seeds are - yes they are flaxseed. It turns out that if you mix some flaxseed and water in is an egg! So I did this because obviously I didn't have eggs at hand! š„
I made this egg cookie cutter by bending a steel circle cutter into this kind of shape, so easy!
Cut and bake.
Because of my lack of ingredients, I could not make frosting - so I had to use some old icing/gel tubes to do most of my decorating. I also put chocolate frosting for the base of the eggs.
Sprinkles, dots, strips or plaid, anything works!

RECIPE:
INGREDIENTS: 1/4 tablespoon butter
1/2 cup sugar
1 egg*
1 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 1/2 tablespoons milk
Frosting:
Any type of chocolate buttercream frosting (I used a store bought can, because I didn't have any thing to make homemade buttercream).
Icing tubes (Again I used store-bought).
STEPS: In a bowl whisk baking soda and salt, set aside for later use.
In a stand mixer, beat sugar and butter, until thick and creamy. Add in egg, milk, and vanilla extract, slowly adding in flour mixture. Cool for 15 minutes. Then roll out 1/4" thick, and cut into an egg shape*. Bake for 10 minutes, and cool for another 15 minutes in the refrigerator.
Lather chocolate frosting and pipe any design using tubes sprinkles or candies.
