One day when my dad and I were visiting Ojai, California, we stopped by to a restaurant called Boccali's Pizza and Pasta. The food was good and all that, but the strawberry shortcake was to die for! It was sweet and gooey, and it had tons of strawberries and a mountain of fluffy whipped cream. It was honestly one of the best things I have ever had. Also, I just wanted to point out that there aren't a lot of photos because I chose to make a video today instead!
This is the end result (without plating of course 😋)
RECIPE:
Ingredients:
1 egg
1 1/3 cups milk
1/4 cup vegetable oil
2 cups Martha White Self-Rising Enriched White Buttermilk Corn Meal Mix
2 tablespoons sugar
2 tablespoons water
1/2 cup strawberries
1/4 cup heavy whipping cream
1/4 cup sugar
STEPS:
Preheat oven to 450 degrees and grease 8-inch pan with butter/oil.
Mix all cornbread ingredients together and pour into a pan. Bake for 20 minutes.
Meanwhile make syrup by mixing sugar and water together. Then cut strawberries into halves and set aside. Make whipped cream by adding heavy whipping cream and brown sugar*.
Assemble by brushing syrup over room temperature cornbread. Lather on whipped cream and strawberries and serve!
Enjoy!

*I used brown sugar because I didn't have any granulated sugar. I recomend using granulated sugar, or powdered sugar as a plan B.
