Day 35: Oatmeal Raisin Cookies

I know, I know, I've been making a lot of things with rolled oats - but who can honestly resist? I made this cookie recipe today because my whole family loves oatmeal raisin cookies, so I thought why not? Fun fact: I had made a batch before I took the video, and my mom ate all six of them! So I decided to make another set of cookies (as seen in the video).



This recipe is really foolproof! It tastes so good, my dad couldn't even put down his first cookie!


RECIPE:


INGREDIENTS:

2 tablespoons butter

1/4 cup light brown sugar

1 egg

1 cup old fashioned rolled oats

1/2 cup almond flour

1 tablespoon maple syrup

1 tablespoon milk

1 tablespoon raisins, sultanas, or currants (I used golden raisins)


STEPS:

Grease a baking sheet with butter REALLY well and preheat oven to 375 degrees.


In a stand mixer cream butter and brown sugar together until pale and fluffy. Add in egg and set aside.


Whisk rolled oats and almond flour in a medium bowl, add this to the butter/sugar bowl.

Add maple syrup, milk and raisins and with an ice cream scoop, scoop out 5 cookies. Bake for 15 minutes.
