Day 39: Deep Dish Pizza

I've always loved deep dish pizzas because it's kind of a cake/pie pizza with cheese! My favorite part of this dish is how much filling you can get. Make sure to make the bottom of the crust super thick so you don't have to worry about anything leaking.


Make the dough and layer. One tip for the first photo is to make sure your crust is up to the brim of the cake pan. If not there will be a chance that your dough will shrink.

You can add some splotches of tomato sauce on the top before you bake it. It gives it some extra color. 😉

Bake and cut. It tastes great!


RECIPE:


INGREDIENTS:

Deep Dish Crust:

3/4 cup warm water

1/2 teaspoon active yeast

1/4 teaspoon sugar

3 cups all-purpose flour

1/4 cup semolina flour or use fine cornmeal

2 teaspoon olive oil

1/2 teaspoon salt

Filling

1/2 a medium onion finely chopped

3 cloves garlic finely chopped

1 red bell pepper thinly sliced or use roasted bell pepper

4 to 5 oz Spinach baby spinach or chopped

a handful of chopped basil

1/2 tsp dried thyme

1/4 tsp salt

red pepper flakes to taste

1 1/2 cup tomato sauce

1/2 cup mozzarella cheese


STEPS: Preheat oven to 435 degrees F and grease a 9" cake pan.


In a large bowl let the water, yeast, and sugar sit for 5 minutes. Then add in 2 cups flour, semolina flour, olive oil, and salt. Mix together with a spoon and add the remaining 1 cup flour in. Knead for a few minutes and let proof in the oven for 20 minutes.


Meanwhile, saute the onions, garlic, until translucent. Then add red peppers, salt, thyme, basil, red pepper flakes, and spinach - stir for a minute.


Roll out dough until it becomes 11" in diameter. Drape into the cake pan and bake for 5 minutes.


Layer the filling: Mozzarella, Tomato sauce, Filling, Tomato sauce, Mozzarella. Bake for 30 more minutes.
