Day 50: Mango Cake

Finally, we are at day 50! I can't believe this has been going on for so long! All I can say is I'm excited for day 100! šŸ˜ Another thing I'm excited about is this cake: A mango cake. Full of the tropical mango flavor from not only the frosting but the cake itself as well!

6. Easy. Steps. It does take a while but come on! It's sooo worth it.

I know 6 eggs, is A LOT! But it gives the cake a lot of texture.

Once you've baked your two cakes, frost the first cake. Then add some mangoes over it.

Fun Fact: Mangoes are yellow because the tree that which the mangoes grow on have a substance called "carotene". Carotene reflects yellow and orange light and it absorbs the blue.

Getting the sides of the cake are pretty hard, you want to use a lot of the frosting on mostly the sides.

You can make a numbers or words out of mangoes! šŸ¤Æ

For any occasion you make this cake, I will guarantee it will be a showstopper!


RECIPE:


INGREDIENTS:

  • For the Cake

  • 6 large eggs (roomĀ temperature)

  • 1 cup sugar

  • 1 tablespoon coconut (dried, sweetened)

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 2 tablespoons melted butter

  • 1 teaspoon coconut extract

  • 2 1/2 tablespoons pureed mango

  • For the Mango and Cream

  • 2.2 ouncesĀ cream cheese

  • 1/3 cup sugar

  • 1 teaspoon coconut extract

  • 2 cups heavy whipping cream

  • 2 tablespoons powdered sugar

  • For Assembly

  • 1 mango sliced and cut into cubes

STEPS:

Preheat oven 375 degrees and grease a 8" cake pan with butter or oil.


In a stand mixer beat eggs, mango, and sugar. Slowly add the coconut, flour, baking powder, salt, butter, and coconut extract. Pour into the cake pan and bake for 30-40 minutes.


Meanwhile, beat heavy whipping cream and powdered sugar together until stiff peaks form, Set aside. Mix cream cheese, coconut extract, and sugar, and slowly fold in the whipped cream.


Once your cakes are cooled, spread frosting and sprinkle 1/2 the mangoes on it. Layer your next cakes and frost to hide all visible cake pieces. Add the last bit of mangoes and serve!
