Day 72: Baked Ravioli

For this bake, you can buy ravioli or you can make it homemade. Nevertheless I choose to make it homemade and the results were fantastic! Also, don't feel intimidated if you don't have a pasta maker or ravioli presser. You can still roll your dough out and cut it with a pizza roller.


The filling is super simple. Substitute the cream cheese with mascarpone as well.

You don't have to do a square ravioli shape. Other shapes include circles or triangles.

Bake for 15 minutes, covered with aluminium foil two times.

RECIPE:

INGREDIENTS:

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons sea salt

  • 3 eggs (1 for the egg wash)

  • 2 tablespoons olive oil

  • 2 cups mozzarella

  • 1 tablespoon Parmesan

  • 2 tablespoons cream cheese

  • 1/2 cup tomato sauce

STEPS:

Preheat oven to 350 degrees F.


Combine flour and salt. Make a well in the center and add the eggs and oil. Knead for a few minutes, cover and let sit for 30 minutes. While your dough is sitting combine mozzarella, cream cheese and Parmesan in a blender and blend until smooth and creamy.


Roll out dough so thin you can almost see through it. Cut 1" rows and place dollops of filling 1/2" apart. Take another row and place it over the bottom. Crimp and cut with a pizza roller. Brush with egg wash and cook for 5 minutes in water.


In an 8" casserole pan cover the bottom with 1/4 cup tomato sauce. Add cooked ravioli and add the remaining 1/4 cup tomato sauce. Cover two times in aluminum foil and bake for 15 minutes.
