Day 154: Fig Banana Bread

This is a lightly sweet quick bread made out of figs and bananas. The two fruit pair up and give a lot of natural sweetness to the dish.


Figs are in season, and I have tons! Good news is that I can make a lot of fig dishes now.


Like I said this is a quick bread. So even though you must bake the bread for 1 hour. It doesn't need proof at all, and saves a lot of time.


Don't skip the cinnamon in this recipe. It's a crucial ingredient when it comes to this bread.


First off, the smell coming from the oven door is amazing because of the cinnamon, and second, it adds such a great flavor.


Make sure to cut your figs pretty small. You don't want too big chunks of figs. You can serve this fig banana bread with coffee as well.

RECIPE:


INGREDIENTS:

  • 2 bananas, mashed

  • 1/2 cup butter, melted

  • 2 eggs

  • 1 1/2 cups all-purpose flour

  • 3/4 cup light brown sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1 cup fresh figs, cut into chunks

  • 1 fig, cut into slices, for top

STEPS:

  • Preheat oven to 350 degrees F and grease your bread tin.

  • In a bowl combine bananas, butter, and eggs. Fold in the flour, sugar, baking soda, and cinnamon. Add you figs that were cut into chunks and pour into your bread tin. Gently press on the few fig slices on top and bake for 1 hour.

  • Cool for 10 minutes and serve.
