Day 248: Gajar Halwa (Carrot Pudding)

Happy Diwali! Today I made gajar halwa. It's basically a sweet, delicious carrot pudding.

This was my first time making gajar halwa. When I tried it today, it was really tasty. Sweet, and the carrots tasted amazing!

You would think that the carrots are hard and crunchy and taste like a vegetable, but because you cook them, they kind of become soft and you wouldn't think they were really the consistency of a carrot.

I like eating this when it's warm, with lots of nuts and/or golden raisins. It also tastes good with some vanilla ice cream.

This is a great Indian sweet! It's gooey and oh so good! In fact, it's super simple! It only takes 15-20 minutes.

RECIPE:


INGREDIENTS:

  • 3 cups carrots, grated

  • 1/4 cup melted ghee

  • 5 tablespoons granulated sugar

  • 1/2 cup khoya

  • 3/4 teaspoon cardamom

Toppings:

  • Golden Raisins

  • Almond Slivers

  • Cashews

  • Vanilla Ice Cream, optional

STEPS:

  1. Heat the ghee in a pot, then add the carrots. Cook, stirring constantly for 10 minutes. Next, add sugar and cook for two more minutes. Add your khoya and cook for 3 minutes until the carrots look soft. Stir in cardamom.

  2. Serve in ramekins with raisins, almond slivers, and cashews. You can even eat it with ice cream!
