Week 9: Key Lime Pie (Florida)

Happy Mother's Day! My mom's favorite desserts are key lime pie and lemon bars. Perfectly, Florida chose key lime pie, so that my mom could enjoy it today!

Key lime pie is made with just a handful of ingredients and is surprisingly easy! You could say that it's as easy as pie. :)

Some grocery stores don't sell key limes, so you can just use any that are on hand. They'll all taste delicious.

For my crust, I use biscoff cookies instead of the usual graham crackers. You can use any biscuit in place of the biscoff cookies. It's important to chill for the directed time so you can have a clean slice of pie when it's time to serve it.

RECIPE:


INGREDIENTS:

Crust:

  • 1 1/4 cups biscoff cookies

  • 1/4 cup butter, melted

Key Lime Filling:

  • 2 eggs

  • 1 cup condensed milk

  • 1/2 cup key lime juice

  • 3 tablespoon key lime zest

STEPS:

  1. Preheat your oven to 375 degrees F. In a food processor, mix the cookies and butter until it forms a crumbly crust. Press onto a pie tin tightly. Bake for 15 minutes.

  2. In a medium bowl, mix the eggs, condensed milk, key lime juice, and key lime zest. Pour into the crust. Bake for 20 minutes until the center is just a tiny bit jiggly. Cover and chill the pie for at least 4 hours.

  3. Decorate the pie with whipped cream and key lime slices.
