Day 301: Lavender Blueberry Muffins

These lavender blueberry muffins taste so heavenly. The hint of lavender pairs gorgeously with the blueberries.

Not to mention the only sweeteners for this recipe is maple syrup. If you don't like maple syrup, that's okay! Honey works just as fine!

Make sure to chop up your lavender so it's quite small. This way, the lavender isn't too strong in your mouth. You don't want it to overpower the muffins.

In this recipe, you will make about six muffins, so it's perfect for a small batch. It's important to fill your muffin tin cups full with batter so you have large domes on the top of your muffins.

Pick the sweetest blueberries, so you don't have sour ones. 😊 It's done in 35 minutes and a great recipe. Perfect for a breakfast or snack treat!

RECIPE:


INGREDIENTS:

  • 1 3/4 cup whole wheat flour

  • 1/2 cup maple syrup or honey

  • 1 tablespoon finely chopped, culinary grade dried lavender

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/3 cup milk

  • 1/4 cup vegetable oil

  • 1 egg

  • 1/2 cup blueberries

STEPS:

  1. Preheat an oven to 375 degrees F. Combine all your ingredients in a large bowl. The batter will be thick. Grease a muffin tin with baking spray.

  2. With an ice cream scoop (a spoon will work), drop the batter into the prepared muffin tin. You want the muffin batter to be piled high in a large dome.

  3. Bake for 25 minutes or until a toothpick/skewer comes out clean.
