Day 138: Lavender Scones

Lavender scones are so tasty and delicious. Not to mention remarkably easy.

These do harden as they cool. But to make sure the scones are done, insert a toothpick, and if it comes clean you can take them out of the oven.


These are perfect for picnics, breakfasts, or just for a snack.


Just like my Banana Apple Muffins, this is super easy.


And you can choose to use the icing or not. I personally love the icing, because it's full of lemon, but it's not required.


Even though this is a sticky dough, don't add too much flour. With a hint of lemon, these lavender scones are so irresistible.

RECIPE: INGREDIENTS:


Lavender Scones:

  • 2 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 2 and 1/2 teaspoons baking powder

  • 3 1/2 teaspoons dried culinary lavender

  • 1 teaspoon lemon zest

  • 1/2 cup butter, chilled

  • 1/2 cup buttermilk

  • 1 egg

Lemon Lavender Icing

  • 1 Tablespoons milk

  • 1/2 Tablespoon lemon juice

  • 3/4 cups powdered sugar

STEPS: In a large bowl, whisk together flour, sugar, baking powder, lavender, and lemon zest. Cut in butter and knead in the rest of the ingredients. Flatten into a disk and cut into triangles. Place onto a baking sheet and bake for 20 minutes at 375 degrees F.

Meanwhile combine milk, lemon juice, powdered sugar in a small bowl. Drizzle onto warm scones.
