Since starting this Cakes from Around the World challenge, I've realized that lemon cakes are a favorite no matter where you are from.
Today, I made a Madeira cake, which is a lemon sponge cake, but it requires more flour. This allows it to hold its shape better.
The Madeira cake was featured on the Great British Bake Off, so of course, I had to try recreating it. The cake was named because it is often served with Madeira wine.
A classic Madeira cake contains a candied lemon slice decoration. This is optional but elevates the dessert to the next level!
RECIPE:
INGREDIENTS:
Cake:
1 cup salted butter
3/4 cup granulated sugar
1/4 cup powdered sugar
3 eggs
2 cups all-purpose flour
Zest of 2 lemons
Juice of 2 lemons
Candied Lemon:
1 cup water
2 cups granulated sugar
2-3 lemons, cut into 1/4-inch slices
STEPS:
Preheat your oven to 325 degrees F, and line a 8-inch cake pan with parchment paper.
In the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Then, add the eggs one at a time, followed by the flour, baking powder, lemon juice, and lemon zest.
Pour the batter into your prepared pan and bake for an hour.
Set aside a baking sheet lined with parchment paper.
While the cake is baking, make the candied lemon slices. In a pan over medium-high heat, dissolve the sugar and water. Next, add the lemon slices and simmer for 15 minutes.
Place the lemon slices onto the baking sheet and let it cool to room temperature.
