Day 2 for Mango Week!!! Let's go ahead and make some easy no proof, mango filled doughnuts!
I seriously have way too many mangoes. Some sitting in the fridge, some in bags, and some with apples. I'm definitely not running out soon. :)
You don't really need to be good at cooking, to make these. You just have to be comfortable using the stove and some oil.
But they're sooooooo worth it in the end.
Mangoes are good...doughnuts are good. So I thought, why not put them together?!

RECIPE: INGREDIENTS:
1 cup mango puree
2 eggs
2 egg yolks (separate from 2 eggs above)
1/4 cup butter
1 1/2 cups all-purpose flour
4 tbsp flour - for dusting and rolling dough
1/2 cup milk
1 tbsp plain yogurt (curd)*
3 tbsp sugar
1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
3 tbsp vegetable oil
1 1/2 cups oil
1/4 cup mango
1/3 cup powdered sugar
STEPS:
Combine mango puree, egg/egg yolks, and sugar over medium heat. Slowly add in butter and continue stirring until thickened. Chill in the refrigerator until ready to use.
Combine all ingredients except the 1 1/2 cups oil at the end. Roll out and cut circles with a cookie cutter. In a large pan heat the 1 1/2 cups of oil. Place doughnuts and cook until golden brown.
Whisk together powdered sugar, and pureed mango until forms a thick paste/icing. Place a doughnut face down and chill immediately. Once cooled pipe the mango custard into the doughnuts.
