Mochi is a Japanese rice cake, that can be filled with fruits, ice cream, custard - really anything.
You can try this with other fruit. Such as strawberry, raspberry, or blueberry.
If you do choose a different flavor, make sure to change the puree flavor.

Use sweet and juicy mangoes. It really makes a difference.

RECIPE: INGREDIENTS:
1 1/2 cups mango pureed
1 1/2 cups glutinous rice flour
2 tablespoons agave syrup
1/2 tablespoon water
1/2 cup Mango flesh, cut into 1" squares
3/4 cup desiccated coconut
STEPS: Combine the pureed mango, rice flour, agave syrup, and water; knead to together.
Roll 1" small circles and make a well in the center to each. Pop a mango in each one and repeat until finished.
Add 8 at a time to a large pan over medium-high heat - a rolling boil. Once the mochi floats up, turn to low and simmer for 2-3 minutes. Roll with desiccated coconut.
