Day 232: Mini Pumpkin Cakes

Yesterday it seems that I said "Day 131" in the title. Oops, thankfully I noticed, and changed it. I guess I've lost track of days. I have been baking for a while, after all. ;)

Today I made these mini pumpkin cakes, that look like pumpkins and ghosts!

I just got a Halloween themed cake pan, from a friend, and I love it so much! Aren't they cute? Halloween's so close, and I can't wait! It's just this Saturday!

I also made some ghosts, and dipped them in a glaze. If you don't have this cake pan, you can use this recipe for mini bundt cakes, or even a single layered cake!

I glazed my ghosts with a yummy cream cheese glaze. It’s done in two minutes and adds a great flavor. I like to glaze my ghost and little sprinkles as the eyes.

Add ¼ cup sprinkles to my batter but that’s completely optional. You see, I purchased to many Halloween themed sprinkles, so I’m using all of them in any kind of way I can imagine.

RECIPE:


Ingredients

  • 1 1/4 cups all purpose flour

  • 1 cup sugar

  • 1 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 1/4 teaspoon cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1/2 teaspoon nutmeg

  • 1/2 cup water

  • 1/4 cup oil

  • 1 egg

  • 1/2 cup pumpkin puree

Cream Cheese Glaze:

  • 2 Oz cream cheese

  • 1/2 cup powdered sugar

  • 1 1/2 teaspoons milk

STEPS:

  1. Preheat your oven to 350 degrees F, grease 8 mini cake pans (or bundt pans), with baking spray.

  2. In a bowl, combine all your ingredients and fill your cake pans 3/4 of the way full. Bake for 20 minutes, and cool for 5 minutes.

  3. In an electric mixer, beat your cream cheese and powdered sugar together, pour your milk, and brush over your cakes.
