Day 322: Morning Glory Muffins

Morning glory muffins are amazing! They sneak in fruits AND veggies without anyone noticing.

You can fill your morning glory muffins any way you want. I love apricots, raisins, apples, bananas (that will be your sweetener anyway), and carrots.

Dried fruit is really great because it doesn't change the texture of the muffins. Fresh fruit will work, and instead of carrots, you can use shredded zucchini.

Confession: I kind of baked these for my snack. Oops! These are healthy and sugar-free. It's a perfect way to use up your fruits and vegetables.

Make sure to use the brown bananas because those are the sweetest. In a pinch, you can use three bananas instead of four.

RECIPE:


INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 4 large bananas, mashed

  • 1/3 cup butter, melted

  • 1 egg

  • 1 tablespoon milk

  • 1/2 cup chopped apples

  • 1/4 cup raisins

  • 1/2 cup shredded carrots

  • 1/4 cup chopped apricots, dried

STEPS:

  1. Preheat your oven to 375 degrees F and line a muffin tin with cupcake liners.

  2. Whisk your flour, baking powder, and baking soda together in a large bowl. Add in the bananas, butter, egg, milk, apples, raisins, carrots, and apricots. Mix until no flour streaks remain, and with a cookie scoop, drop your batter into the prepared cupcake liners. Bake for 25 minutes and serve!
