Day 304: No-Bake Granola Bars

These no-bake granola bars are simple and make a fantastic breakfast or snack. The mix-ins are customizable and the hands-on time is only 5 minutes!

I add freeze-dried fruit for my mix-ins. For me, they taste a little stronger than fresh fruit, and they don't allow any extra moisture.

Bananas and strawberry freeze-dry fruit work great together! Another add-in is pepitas. Pepitas have a hint of savory and I really like them paired with the sweet fruit.

Feel free to add nuts, dried fruit, and more! Chill the granola bars in the freezer for the required time so that they don't crumble.

This recipe is perfect for a simple treat that you can make quickly. Not to mention you don't even need an oven!

RECIPE:


INGREDIENTS:

  • 2 cups rolled oats

  • 1/2 cup honey

  • 1 cup peanut butter

  • 1 cup mix-ins of choice

STEPS:

  1. In an 8x8 casserole pan, place parchment paper inside leaving an overhang. In a large bowl combine all your ingredients.

  2. Pour the granola mixture into your prepared casserole pan and flatten with a cup or spatula. Freeze for 1-2 hours. Cut and serve.
