This week, I was craving a rich yet simple olive oil cake. It has hints of lemon and citrus--perfect for the upcoming Spring weather.

In my household, olive oil cakes are such a classic dessert to serve for a special breakfast or brunch.

They come together so easily and you can easily customize them to your liking. I love adding crushed pistachios or almonds.

I like serving olive oil cakes with a dusting of powdered sugar and sometimes a bit of lemon zest or peel!
RECIPE:
INGREDIENT:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup olive oil
1/2 cup yogurt
2 eggs
Zest of 1 lemon
Juice of 1 lemon
STEPS:
Preheat your oven to 350 degrees F and line an 8-inch can pan with parchment paper.
In a large bowl, combine all the ingredients. Pour the batter into your cake pan and bake for 35 minutes.
Dust with powdered sugar, if desired.
