Week 43: Olive Oil Cake

This week, I was craving a rich yet simple olive oil cake. It has hints of lemon and citrus--perfect for the upcoming Spring weather.

In my household, olive oil cakes are such a classic dessert to serve for a special breakfast or brunch.

They come together so easily and you can easily customize them to your liking. I love adding crushed pistachios or almonds.


I like serving olive oil cakes with a dusting of powdered sugar and sometimes a bit of lemon zest or peel!


RECIPE:


INGREDIENT:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 cup olive oil

  • 1/2 cup yogurt

  • 2 eggs

  • Zest of 1 lemon

  • Juice of 1 lemon

STEPS:

  1. Preheat your oven to 350 degrees F and line an 8-inch can pan with parchment paper. 

  2. In a large bowl, combine all the ingredients. Pour the batter into your cake pan and bake for 35 minutes.

  3. Dust with powdered sugar, if desired.
