Week 5: Orange, Almond, and Rose Cake

I made this cake for a birthday and it was a success! It was one of the most unique cake flavors I have ever made, and it tastes so amazing.

While the cake is just a sheet cake, it is packed with flavor. It contains delicious hits of orange, almonds, and rose.

Additionally, this cake is also very unique because it doesn't require any butter or oil.

It is also made with whole oranges that you will blend into a puree and a rose and orange flavored syrup that elevates the cake to the next level.

RECIPE:

INGREDIENTS:

Cake:

  • 2 whole oranges

  • 3/4 cups almond flour

  • 3/4 cups granulated sugar

  • 1 1/4 teaspoons baking powder

  • 5 eggs

Syrup:

  • 1/2 granulated sugar

  • 1/4 cup water

  • Juice of 2 oranges

  • Zest of 2 oranges

  • 2 tablespoons rose water

STEPS:

  1. In a pot filled with water, let your whole oranges simmer over low heat for 40 minutes. Then, take the oranges out of the water and set aside until they cool. Once cooled, blend in a blender.

  2. Preheat your oven to 325 degrees F, and grease a 9-inch cake pan with butter.

  3. In a bowl, mix the pureed oranges, almond flour, sugar, baking powder, and eggs. Pour into the prepared pan and bake for 1 hour. Set aside to cool to room temperature.

  4. Over medium heat, in a small pan, stir the sugar, orange juice, orange zest, rose water, and water until the sugar dissolves. This should take about five minutes.

  5. Poke holes all around the top of your cake and pour the syrup over. Serve.

Enjoy!
