Day 342: Orange Pancakes

It's National Pancake Day, so I made these fluffy orange pancakes. They are full of that wonderful orange flavor and so easy to make.

This recipe is naturally sweetened with maple syrup and oranges. You can use any kind of orange, though I made this recipe with blood oranges.

While whole wheat flour works well in this pancake recipe, it does tend to overpower the orange flavor. I recommend using all-purpose for best results!

Instead of orange juice, lemon is another alternative. It adds a great zing, and both are perfect for the citrus season! You can use the same amount.

Make sure to cook these orange pancakes on low heat so they don't burn too fast. Try this recipe out, and you'll add it to your breakfast rotation!

RECIPE:


INGREDIENTS:

  • 1 1/2 cups all-purpose flour

  • 1 tablespoons maple syrup

  • 1 teaspoon baking powder

  • 1 cup orange juice

  • 2 eggs

  • 2 tablespoons butter, melted

  • Oil, just for cooking

STEPS:

  1. Combine all your pancake ingredients in a large bowl. Heat a pan with oil and add 1/4 cup worth of your pancake batter.

  2. Spread into a circle and cook on each side for 1-2 minutes or until bubbles form. Make sure the heat is on low!!! Repeat and serve with berries and maple syrup.
