Pav bhaji is a popular Indian dish, in which bread rolls are served with mashed vegetables.
Originally, I wasn't a huge fan of pav bhaji, but now that I've grown up, I find myself enjoying it much more often.
Additionally, don't worry if you are not a fan of vegetables. You won't even taste them at all once they are mashed together.
Pav bhaji is served with pav, which can be found in most Indian grocery stores. They are also known as eggless bread rolls.
RECIPE:
INGREDIENTS:
2 onions, diced
6 tomatoes, diced
2 garlic, minced
1 tablespoon vegetable oil
2 teaspoons pav bhaji masala.
2 potatoes, boiled
2 cups frozen peas and carrots, boiled
2 zucchinis, diced
1 cauliflower, boiled
12 pav/bread rolls
STEPS:
In a pan, over medium-high heat, sauté the onions, tomatoes, and garlic for five minutes. Then, add the pav bhaji masala, potatoes, peas, zucchini, and cauliflower. Cook for 3-5 minutes.
Using a potato masher, crush the vegetables until they are fully combined.
Toast the pav by heating a pan over medium heat. Grease it with butter and cook the pav until golden on both sides.
