Popovers are little rolls that are crisp on the outside and fluffy on the inside. It's easy to make and cool to watch in the oven.
You can eat popovers plain, with butter, or with jam+berries. I love raspberries with jam. I also like blueberries!
You have to chill the popovers for an hour, this is very important. Don't skip it! Unlike many recipes, you don't have to do anything special to the ingredients. Just make sure to chill it for the directed time.
The amazing thing with popovers is that you don't need any leavening agent. These rolls rise without the help of baking powder or baking soda.
You don't need to buy a popover pan either. You can just use your standard muffin tin. I get 12 popovers from this recipe.

RECIPE:
INGREDIENTS:
2 cups all-purpose flour
2 teaspoons granulated sugar
3 eggs
2 cups whole milk
3 tablespoons butter
STEPS:
In a large bowl whisk the eggs until they are frothy. Meanwhile, melt the milk and butter together. Add the milk/butter mixture into the eggs and mix. Stir in the flour and sugar. Cover with plastic wrap and chill for one hour.
Preheat your oven to 450 degrees F and grease a muffin tin with baking spray.
With an ice cream scoop, pour the popover batter into each muffin tin cup. Fill it 3/4 of the way full. Bake for 10 minutes and then lower the temperature to 325 degrees. Bake for 35 minutes.
