Day 344: Raspberry Lemon Bread

Raspberries and lemon are perfect for the spring and all packed into this moist and easy bread.

Last month the winner of my bread poll was the quick bread! In second place was the pull-apart bread and lastly in third place was the whole wheat sandwich bread.

Now I have put up a new dessert poll so you can choose your favorite treat! This bread is super simple and made in one bowl.

Make sure to fold your bread gently because the raspberries get mashed easily. If you don't have raspberries on hand, blueberries and lemon are a great combination!

These two bright flavors come together to create a deliciously simple and healthy, quick bread that you will love!

 

|Level: 👩🏽‍🍳|Time: 35 minutes|Serves: 6-8|

RECIPE:

INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 2 tablespoons milk

  • 5 bananas, mashed

  • 1 egg

  • 1/3 cup butter, melted

  • 1 1/2 cups raspberries

  • 11/2 tablespoons lemon zest

STEPS:

  1. Preheat your oven to 375 degrees F and grease your bread tin with butter.

  2. In a large bowl, combine all your ingredients. Pour into your prepared bread tin.

  3. Fill the batter to the top. Bake for 40-45 minutes.
