Day 111: Strawberries and Cream Popsicles

The mixture between the strawberries and cream is simply delightful. It's rich, creamy, and fluffy. A total dream come true.

This dish is perfect for Spring/Summer.

If you don't have any heavy whipping cream, you can use yogurt, though heavy whipping cream really brings out this popsicle special flavor.

If you don't have strawberries, use any other fruit you want. They all work!!!

You can roast the strawberries to avoid the icy bits in the popsicle. Just preheat the oven to 375 degrees F and spread the strawberries out on a tray. Bake for 20 minutes. After the strawberries have cooled, add it to the whipped cream.

RECIPE: INGREDIENTS:

  • 1 lb strawberries, hulled and cut into halves

  • 3 tablespoons water

  • 3 tablespoons granulated sugar

  • 1 cup heavy whipping cream

  • 3 1/2 tablespoons powdered sugar

STEPS:

  1. Cook the strawberries, water, and granulated sugar until the strawberries soften. This should be over medium heat.

  2. Meanwhile, beat together the heavy whipping cream and powdered sugar until stiff peaks form. Add the strawberry mixture into the whipped cream and fold to combine.

  3. Spoon into molds and freeze for 3-4 hours or until firm.
