Week 1: Almond Lemon Cake

Today marks the day of my new challenge, where I will be baking cakes from around the world! 

I have been eager to try this challenge out for a long time. Out of all my favorite desserts to bake, cakes are definitely on the top of my list.

The "Cakes From Around the World" challenge would also allow me to explore more flavors of cake and the history behind them.

This lemon almond cake has been a cake that I have been dying to bake. According to my research, the cake is a classic flavor in Italy and can also be known as Dolce di Amalfi. Serve it with a dusting of powdered sugar and it will be pure perfection!

 

RECIPE:


INGREDIENTS:

Cake:

  • 1 cup almond flour

  • 1/2 cup granulated sugar

  • 1/4 teaspoon baking powder

  • 3 eggs

  • 1/4 cup olive oil

  • 1 lemon, zested

Topping:

  • Sliced Almonds, to taste

  • 1 tablespoon granulated sugar

STEPS:

  1. Preheat your oven to 325 degrees F, and grease a 9-inch cake pan with butter. 

  2. In a large bowl, mix the almond flour and baking powder together. 

  3. Then, in a stand mixer, beat the eggs and sugar until tripled in volume. Gently, whisk in the oil, almond extract, and lemon zest. Fold in the dry ingredients and pour the batter into your prepared pan.

  4. Top off the cake with the almonds and a sprinkling of granulated sugar and bake for 35 minutes.
