It’s almost fall, and I am so excited. I love the cozy recipes that are filled with warm spices.
I keep seeing pumpkin spice pancakes everywhere I go, and knew I just had to make it for the blog.
I love adding chocolate chips or even topping the pancakes off with homemade cinnamon butter.
The pumpkin puree in this recipe adds extra moisture resulting into an extremely fluffy pancake batter. You won't regret trying this for your next brunch!
RECIPE
INGREDIENTS
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoons baking soda
2 teaspoons pumpkin pie spice
2 tablespoons vegetable oil
1 cup whole milk
1 1/2 cups pumpkin puree
STEPS:
In a large bowl, combine the flour, baking powder, baking soda, and pumpkin pie spice. Add in the wet ingredients: oil, milk, and pumpkin puree. Mix together and prepare your griddle or pan.
Heat your griddle/pan over medium-high heat and grease it with butter.
Place 1/4 cup worth of batter onto your griddle/pan and cook for 1-2 minutes over low heat. Flip and cook for another 1-2 minutes. Serve warm with your favorite toppings!
