With all the cloudy, rainy days in Seattle, I wanted to bake something that would put a smile on my face. These Funfetti sugar cookies were the answer.
They are so colorful and fun, plus they are much better than the ones you find at the grocery store.
I love that in this sugar cookie recipe, you don’t have an added chill time. Just make the dough and bake it!
One important tip for this recipe is that you add sprinkles on top of the cookie before you bake it so it looks more festive.
RECIPE:
INGREDIENTS:
1 cup butter
1 1/2 cups granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
2 1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sprinkles
STEPS:
Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream the butter and sugar together. Add in the eggs and vanilla extract and mix for 4 minutes. Slowly incorporate the flour, baking powder, and baking soda. Gently fold in 1/3 cup of the sprinkles.
With a cookie scoop, drop the dough onto the prepared pan. Add the remaining sprinkles on top of the cookies. Make sure to leave 2 inches in between each cookie, in case they spread while baking.
Bake for 10 minutes and let it cool for 5 minutes before serving.
