Week 22: Torta Caprese

Torta caprese is a classic dessert from the island of Capri in Italy, where the cake is named.

Usually, I wouldn't say I like eating chocolate, for some reason, I LOVE chocolate cake. So, when I learned about this decadent chocolate cake, I couldn't resist baking it.

However, torta caprese is not just a typical chocolate cake. It is gluten-free because it uses ground almonds (or in some cases, hazelnuts), instead of normal wheat flour.


I recommend serving your torta caprese cake with a dusting of powdered sugar or strawberries on the side.

 

RECIPE:


INGREDIENTS:

Cake:

  • 3 eggs, separated

  • 1/2 cup butter, softened

  • 1/2 cup granulated sugar

  • 1 1/2 cups almond flour

  • 130 grams 60% dark chocolate, melted

STEPS:

  1. In the bowl of your stand mixer, beat the egg whites until stiff peaks form.

  2. In another bowl, begin mixing the butter and sugar until fluffy. Next, add the egg yolks almond flour, and chocolate.

  3. Gently fold the egg whites and pour the batter into your prepared pan. Bake for 40 minutes.
