Week 25: Tiramisu

I seriously can't believe it has already been 25 weeks since the start of my cake challenge. Time flies when you are having fun!

Tiramisu was invented fairly recently in the 1970s by the pastry chef of Le Beccheri, Roberto "Loli" Linguanotto, and the owner of the restaurant's wife, Alba Campeol.

I love tiramisu. Which is pretty surprising as I am not a big of a fan of caffeine. I genuinely think I could eat tiramisu every day without getting sick of it.

Even though it is technically a trifle, I personally consider this dessert to be classified as a cake.

 

RECIPE:


INGREDIENTS:

  • 1 1/2 cups heavy whipping cream

  • 8.8 oz. mascarpone

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups room-temperature or cold espresso

  • 1 package of ladyfingers

  • 2 tablespoons cocoa powder

STEPS:

  1. In the bowl of a stand mixer, beat the heavy whipping cream, mascarpone cheese, sugar, and vanilla extract until stiff peaks form.

  2. Pour the espresso into a shallow bowl or pan. Then, dip each ladyfinger until it soaks up the espresso.

  3. Layer your ladyfingers onto the base of an 8-inch square pan. Spread half of your cream over the ladyfingers and repeat this process one more time.

  4. Cover and refrigerate for at least four hours, if not overnight.

  5. To serve, dust with cocoa powder.
