I feel like fall and pumpkin is the perfect pairing, so it was about time to make a pumpkin layered cake.
I honestly can't believe I've never made a pumpkin layered cake because it has been on my list for such a long time.
Even though this cake is elaborate, it's straightforward to make. Plus, the addition of brown butter makes the pumpkin cake more decadent.
Nothing screams fall more than pumpkin! This cake is perfect for a Thanksgiving dessert or a delicious treat for a party.
RECIPE:
INGREDIENTS:
Cake:
1 1/4 cups unsalted butter
2 cups brown sugar
1 tablespoon pumpkin spice
3 eggs
3 1/2 cups all-purpose flour
2 teaspoons baking powder
Frosting:
1 cup butter, softened
2 cups cream cheese
2 cups powdered sugar
1 teaspoon vanilla extract
STEPS:
Preheat your oven to 350 degrees F, and line two 8-inch cake pans with parchment paper.
In a large pan, melt the butter for 5-8 minutes until brown specks appear. Set aside to cool.
Mix the butter, sugar, and pumpkin spice together in a bowl. Then, add the eggs, flour, and baking powder.
Pour the batter into your prepared baking pans and bake for 30 minutes. Set aside to cool.
While the cake is cooling, make the frosting. In the bowl of a stand mixer, cream the butter, sugar, cream cheese, and vanilla extract for 4 minutes. Loosen the frosting with milk.
Layer the frosting between the cake layers and decorate the exterior as well.
