While I like a classic oatmeal raisin cookie, I think they are so much better with the addition of chocolate and butterscotch chips.
This recipe is simple, easy, and delicious. I kid you not, my family ate the whole batch in one sitting!
To be honest, butterscotch chips aren't my favorite, but they really work in this recipe. They work to provide a very unique flavor.
If you have time, I recommend chilling the cookie dough for a good 5-10 minutes, just so the flavors can be enhanced. However, this step is not required.
RECIPE:
INGREDIENTS:
1 stick butter, softened
1/2 cup brown sugar
1 egg
1 cup flour
1 teaspoon baking soda
1 cup rolled oats
1/3 cup chocolate chips
1/4 cup butterscotch chips
STEPS:
Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.
In your stand mixer, cream the butter and sugar together. Then add the egg and mix for 4 minutes. Slowly add the flour, baking soda, and oats before folding in the chocolate and butterscotch chips.
With an ice cream scoop, roll out balls from the cookie dough and place them on your prepared baking sheet. Make sure to leave 2 to 3 inches in-between each cookie and bake for 10-12 minutes.
