Interestingly enough, this cake and Mississippi mud pie was named after the Mississippi River and how muddy it is.
When I first saw this recipe, I confused it with the Mississippi mud pie because they look quite similar. However, I soon realized that they're two very different desserts.
For starters, Mississippi mud cake is a chocolate cake layered with marshmallows and decadent chocolate icing.
On the other hand, the Mississippi mud pie is baked in a pie tin (surprise, surprise) and is filled with chocolate mouse, and topped with whipped cream. So, while both treats share a similar name, they are unique in their ways!
RECIPE:
INGREDIENTS:
Chocolate Cake:
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon baking powder
1 teaspoon baking soda
1/3 cup cocoa powder
1/3 cup vegetable oil
1/3 cup yogurt
1 egg
1/2 cup hot water
5 oz. mini marshmallows
Icing:
1/2 cup butter
1/2 cup milk
1/4 cup cocoa powder
2 1/2 cups powdered sugar
STEPS:
Preheat your oven to 350 degrees F and grease a 9-inch cake pan with butter.
In a large bowl, mix all the chocolate cake ingredients. Pour the batter into a prepared pan and bake for 25 minutes.
Next, sprinkle your marshmallows over the cake so that it is completely covered. Bake again for 7-8 minutes until melted.
Set aside to cool until the cake reaches room temperature.
To make the icing, heat the butter and milk over medium heat in a pan until melted. Add the cocoa powder and pour this into your stand mixer. Stir in the powdered sugar and beat on high for five minutes. Drizzle over the cake and let it cool in the refrigerator for 45 minutes. Then, it is ready to serve.
