Week 33: Mixed Berry Scones

It’s pretty safe to say that I am obsessed with making scones. They are just the best breakfast treat!


I also love how they are so versatile. You can add in any filling inside and have the most delicious outcome.

This time, I decided to make a mixed berry scone. I added blueberries, strawberries, and raspberries.

Today, I didn’t end up making a glaze to top my scones off, but feel free to try one out if you are interested.

 

RECIPE:


INGREDIENTS:

  • 2 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 2 1/2 teaspoons baking powder

  • 1/2 cup butter, cut into cubes

  • 1/2 cup milk

  • 1 egg

  • 1/4 cup blueberries

  • 1/4 cup raspberries

  • 1/4 cup strawberries, chopped into pieces

STEPS:

  1. Preheat your oven to 375 degrees F, and line a baking sheet with parchment paper.

  2. In a large bowl, mix the flour, sugar, and baking powder together. Cut in the butter, and slowly pour the milk and the egg into the mixture. 

  3. Gently fold the combination of fruits into the dough. Flatten it out into a disk, and cut the dough into 8 pieces. 

  4. Place your scones onto the prepared baking sheet. Make sure to keep them 1-inch apart. Bake for 20 minutes and serve.
