Week 34: Banana Chocolate Snack Cake

If there is any flavor combination better than chocolate and strawberries, it's chocolate and bananas.

Today, I am sharing a simple banana chocolate snack cake that can easily feed a crowd while still looking elegant and inviting.

And the frosting is not your regular chocolate buttercream. I used my cream cheese frosting as a base and added a touch of cocoa powder to elevate the cake.

If you want to make the cake even more chocolatey, try adding 1/2 cup semi-sweet chocolate chips to the batter before baking.

 

RECIPE:


INGREDIENTS:

Cake:

  • 6 tablespoons butter, softened

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 eggs

  • 2-3 bananas, mashed

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground pumpkin spice

  • 3/4 cup yogurt

Frosting:

  • 1/4 cup butter, softened

  • 4 oz cream cheese, softened

  • 1 1/2 cup powdered sugar

  • 2 tablespoons cocoa powder

STEPS:

  1. Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and both sugars. Slowly add the eggs and then the mashed bananas. Finally, mix in the dry ingredients and yogurt until you form a batter.

  3. Pour the cake into your prepared pan and bake for 25 minutes. Set aside to cool.

  4. To make your frosting, cream the butter, cream cheese, and powdered sugar. Add milk and cocoa powder.

  5. Spread the frosting over your cake and serve with extra bananas, if desired.
