Week 34: Hot Chocolate Cookies

To me, these hot chocolate cookies are the definition of what the holidays feel like. They are full of chocolate, perfectly sweet, and have a fudge-like texture.

Trust me, once you eat these fresh out of the oven, your whole world will change.

The cookies turned out to be so gooey and chewy, with a crunchy exterior.

And don’t get me started on dipping these in hot chocolate. It takes the already delicious recipe into a whole other league!

Seriously, these are the perfect cookies to cure your holiday blues. Make sure to eat them warm, with a cup of hot chocolate, and I guarantee you won't regret it.

 

RECIPE:


INGREDIENTS:

  • 1/4 cup brown sugar

  • 1 egg

  • 2 tablespoons butter

  • 4 oz dark chocolate, chopped

  • 1/4 cup all-purpose flour

  • 1/4 cup hot cocoa mix

  • 1/4 cup cocoa powder

  • 1/4 teaspoon baking powder

STEPS:

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. In a small bowl, microwave the butter and chopped chocolate together until melted. Meanwhile, in a stand mixer, beat the eggs and sugar together for five minutes until tripled in volume. Slowly add the chocolate mixture to the egg and sugar. Now, fold in the rest of your ingredients.

  3. Refrigerate the dough for 15 minutes until it thickens up.

  4. Scoop the cookie dough onto your prepared baking sheet and bake for 12 minutes.
