Seviyan kheer, also known as vermicelli kheer, sevai kheer, or semiya kheer, is a classic Indian dessert you can never go wrong with.
Seviyan is made out of vermicelli rice noodles, which you should be able to get at most grocery stores.
Kheer is a rice pudding that is typically made with basmati rice. However, in this variation, I used vermicelli noodles!
In addition to the vermicelli noodles, I love to add chopped unsalted pistachios, almonds, or cashews. Plus, golden raisins are a must; they are a staple in so many Indian sweets.
RECIPE:
INGREDIENTS:
2 cups whole milk
1/4 teaspoon ground cardamom
1/2 cup condensed milk
1/2 cup vermicelli noodles
1/4 cup golden raisins
1/3 cup chopped nuts of choice
STEPS:
In a pot, over medium-high heat, boil the milk with the cardamom. Then, add condensed milk, vermicelli noodles, raisins, and chopped nuts of your choice.
Cook for 15 minutes until the noodles soften, and remember to keep stirring! Serve.
