Week 40: Lemon Poppy Seed Scones

Hi, everyone! Tomorrow is a busy day for me, so I am posting a day early.


I can't believe we are 40 weeks into this less than 30-minute recipe challenge. Time has just flown by! After scrolling through the dishes I made recently, I realized that I am addicted to baking scones. 

It's quite apparent that they are my favorite thing to bake. I love how crispy they are on the outside and how soft and fluffy they are in their interior. You can never go wrong with a good scone.

Plus, they are SO easy to make. I can have a batch of fresh scones in around 30 minutes. How convenient is that?!

I know, I know, these lemon poppy seed scones scream spring, but I don't care. Lemon poppyseed scones are delicious in any season. :) 

 

RECIPE:


INGREDIENTS:

Lemon Scones:

  • 2 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 2 and 1/2 teaspoons baking powder

  • 1 tablespoon poppy seeds

  • 1 tablespoon lemon zest

  • 1/2 tablespoon lemon juice

  • 1/2 cup butter, chilled

  • 1/2 cup buttermilk

  • 1 egg

Lemon Icing

  • 1 Tablespoons milk

  • 1/2 Tablespoon lemon juice

  • 3/4 cups powdered sugar

STEPS:

  1. In a large bowl, whisk together flour, sugar, baking powder, poppy seeds, and lemon zest. Cut in butter and knead in the rest of the ingredients. Flatten into a disk and cut into triangles. Place onto a baking sheet and bake for 15 minutes at 375 degrees F. 

  2. Optional: combine milk, lemon juice, and powdered sugar in a small bowl. Drizzle onto warm scones.
