I can't believe that after a few years of baking on this blog, I haven't made a coffee cake. Or maybe I have; it's hard to keep count!

Admittedly, I have made a few coffee cake spin-offs, like my Kuchen or Bublanina, which were absolutely delicious.

I love a good coffee cake and always eat one at cafes. However, it occurred to me that I needed to try baking a homemade coffee cake because recipes always taste better from scratch.

After all the snow days Seattle has been having, it was a good break to bake this delicious cake between my Zoom classes!
RECIPE:
INGREDIENTS:
Filling:
1/3 cup granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon cinnamon
Topping:
1/4 cup butter, softened
1/2 cup brown sugar
1/2 cup all-purpose flour
Cake batter:
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
2 cups all-purpose flour
1/2 cup yogurt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
STEPS:
Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.
In a small bowl, whisk the cinnamon, granulated sugar, and flour to form the filling.
In another bowl, mash the butter with the brown sugar, cinnamon, and flour to create a crumble.
In the bowl of a stand mixer, cream the butter and sugar together. Add the eggs and beat until light. Gently add half of the flour, followed by the sour cream. Then, mix in the remaining flour, plus the baking powder and baking soda. Pour the batter into a prepared pan and bake for 45 minutes until golden brown.
If you want icing to decorate the cake, mix the powdered sugar and milk in a small bowl. Then, drizzle onto the cake with a fork.
